Today we offer a new recipe with the Cooketier. Discover this delicious dessert, simple to realize and really good which will introduce new flavors to your customers and will give them a funny show!
List of ingredients
For 4 guests:
– 150g Chestnut cream
– 1L. Whipping cream 30%
– 8 Egg yolks
– 200g Caster sugar
– 9g Kappa
– 1 Vanilla pod of Madagascar
– 1 Cooketier (or more)
– Cookal elixir for Cooketier
The recipe step-by-step
Step 1:
Make a custard and let the vanilla infuse in the boiling cream. Out of the heat, beat the egg yolks with the caster sugar and the Kappa. Add the infused cream and cook up to 82°C.
Step 2:
Pour around 3cm of chestnut cream with a supple texture. Keep refrigerated.
Step 3:
Garnish the glass cup with the cream to the ¾ and keep refrigerated.
Step 4:
Close the cup. Fermer avec le chapeau. Always keep 1.5cm empty on top of the glass cup
Step 5:
Pour 3ml of flavoured Cookal elixir inside the base and light it with a long lighter.
Possible variant: You can also replace the chestnut cream with 150g redcurrants or other fruits jelly.
